This has to be built in from the start, because converting an already populated catalog to this calculation costs more than designing it that way from the beginning.

Why put purity and weight in separate fields?

Because these are exactly what customers compare items by and base their decision on. As long as the purity sits in the description text, it is impossible either to filter by it or to compare two models. Besides, this data is needed for correct product markup, which search engines read.
